Hello again...........

It's been a couple of weeks since my last post and I wouldn't want you to think that I've been skiving (Dictionary- skive: to avoid school or work by staying away or leaving without permission).
The reason I've not been around is due to a bout of severe pain in my hands and fingers making blogging (and gardening and scrapping for that matter) something to avoid.
When the joints in my left foot started to hurt earlier this week a trip to my medicin traitant (GP) was called for and she confirmed my self diagnosis - I have arthritis. 
Osteo not Rheumatoid, which is a good thing. Right?
Anyway, enough whining......................
During my self imposed rest period I have been doodling around in the kitchen, trying out a few of the hundreds of recipes on Pinterest for tomato pie. 
You may remember that I enjoyed a Southern style tomato pie at Annie O's restaurant in Hilton Head earlier this Spring since when I have been trying to track down a recipe to replicate it here at home.


Many of the recipes have mayonnaise in the topping and of all the ones I tried they probably came the closest to Annie O's pie but we didn't like those, too sickly.


This one is more to our taste, it's more of a quiche though than a pie, as you can see someone couldn't wait to take a piece.


Whilst all the testing and tasting was going on the new green asparagus arrived in the Farmer's markets so I made an asparagus quiche, just for a change!


In just a couple of days I'll be off travelling once more - this time to the beautiful Ikos Oceania Resort  overlooking the beautiful blue Aegean Sea, in the heart of Halkidiki, Greece.

  1. I'm sorry to hear about your arthritis, Maggie. Not fun. But you managed to create some very yummy dishes. Quiche is a favorite around here. We have asparagus in our garden coming up a few stalks at a time, which I cut then save for a day or two until I have enough to add to a dish for the two of us. An asparagus quiche sounds wonderful.
    I make a rustic tomato tart when the tomatoes are ripe off the vines. Here's a link. http://lorriesrecipes.blogspot.ca/2010/08/rustic-beefsteak-tomato-tart.html. It's from a Fine Cooking magazine and is really good, but not at all quiche-like.

  5. I had missed your posts, sorry about the arthritis, you have my understanding I suffer from the same in my hands and spine. I'm sure your forthcoming trip to warmer places will help. Enjoy the Agean sea.
    As far as tomato pies go, I find the simpler the ingredients are the better they taste. Such as a pre-baked pastry pie case, spread some Dijon mustard over the base, then completely cover with a good layer of sliced tomatoes sprinkled with herbs de provence and a drizzle of olive oil, and about five mins before it's ready, rip some mozzarella cheese and dot over the top put back in the oven until it slightly melts and to serve, sprinkle with some shredded fresh basil. ooh, that's got my taste buds going, I think I might make one for lunch.

  8. Your pies look so delicious that I needed to prepare a snack for myself (I'm coming from the gardening works) to be able to write a comment. :)
    I don't know much about arthritis, but I could imagine the warmth of Greece will be helpful.

  9. Osteoarthritis is no fun. I love quiche and tomato pie. I haven't had a tomato pie in years and will start looking for recipes -- just in time for the fresh tomatoes at the Farmers Market! Have a nice journey!

  10. I've never had a tomato pie but if it's similar to quiche, I know I'd like it. Not fun when you have arthritis in your hands and I hope you can manage with it, enjoy your trip to Greece.

  15. I remember how my mother suffered with her arthritic hands, but she had rheumatoid, which was so painful. Perhaps the warm sea air will help. My mom also made green tomato pie to use up the excess green tomatoes. It was seasoned and sweetened just like her apple pies, really delicious. Enjoy your vacation. Soak up some sun for us an be sure to post photos of the beautiful sea.

  16. I'd rather have a quiche or tart than a pie, I think. (eggs rock!) I feel for you with your hands. I am noticing it more and more and fear the same (especially in the thumb and wrist). I know it may be inevitable but it isn't fun... the knitting lays incomplete till I can do a row now and then. Hang tight. (I find warmed up beanbags or rice bags sometimes help, and sometimes when they are cold, too -- all depends.) Nice to see you here, and happy you are able to blog a bit!

  17. I feel for you and your Arthritis diagnosis and I also have that going on. More in my knees and also spine, but living through it and enjoying life as it sounds like you are doing. The pies and tarts looks splendid and quiche is a favorite here~
