Celebrity Cook - Along with Rachel Ray

This month Lynn @ Happier Than A Pig In Mud has challenged us to a cook - along with Rachel Ray.

I have to tell you that I'm enjoying this monthly party very much, partly because some of the Chefs that Lynn has chosen are unknown to me.
I have seen a few Rachel Ray shows on TV, during vacations spent in Hilton Head, SC. and I believe she will be coming to the FoodNetwork channel, on satellite TV over here, sometime soon.

I always enjoy trying new recipes and Rachel Ray has some that are very simple and easy to follow.
For this cook - a long, I made.........................

and served it with

Click on the links for these recipes which were featured in an episode titled
"Steppin' Out"
Together they make a great 30 Minute Meal.

For "afters" I made Rachel's big sister Maria's

A perfect summer dessert.

Bon appétit

  1. I'm always looking for a new way to serve salmon, as we eat it often at this time of year - the Fraser River Salmon fishery opened yesterday -because it is plentiful and delicious!

  13. Oh Maggie....does that look Goooood!!!
My Mom used to make "potato cakes" with leftover mashed potatoes, but to my knowledge, she didn't add cream cheese.
I just bookmarked that recipe so I can try it & I'll give the fish a go, also.

Regarding the making of taco shell bowls at home, Kathleen said she used a ruffled edged bowl to shape her's over the edges. I think she heated them first. I should get her to clarify that for us.

The salad dressing was good, esp. with the steak & avocado, which I'm not a big fan of, but it was tasty.
I must say, your meal sounds much more to my liking, though.
    fondly,
    Rett

  18. Yum! I love salmon.

I think people that don't are those that had it served "overdone" and I always remove the skin and dark fatty stuff before serving!

Those crispy mashed potatoes is something I'm trying soon.

  21. Yum, it all looks good, Maggie. Salmon is often my fish of choice. I need to pull out some of the fresh peaches we froze in July and make one of those desserts. ;-)

I haven't been at the computer lately because I had knee surgery so I'm just catching up. I love your posts Scenic Sunday and Room By Room...I had missed those posts and was so happy to catch up.
By the way, I'm following but my little icon is missing so I'm in a generic silhouette.
    Have a great week.
